2 tbsp olive oil
1 medium onion (preferably red)
2 medium bell peppers - the more color the better!
4 cloves of garlic
1 cup of beer or broth
1 can (32 oz) crushed tomatoes
1 can of black beans - rinsed
1 can of red kidney beans - rinsed
1 tbsp cumin
1 tbsp chili powder
6 dashes of cayenne sauce or tabasco sauce
Pinches of salt
1 can of vegetarian refried beans
Garnish: shredded cheese, scallions, sour cream, whatever else
Heat oil in pot. Add onions, peppers, garlic, cook 3 to 4 minutes. Add beer or broth and scrape the bottom of the pan. Reduce liquid - 2 to 3 minutes. Add tomato, beans, and seasonings. Cook 10 minutes. Add refried beans to thicken, finish cooking another 5 minutes. Serve in bowls with choice toppings.
Side salads or add corn bread to the meal.
