Quiche Lorraine (serves3-6)

This is a favorite of ours! You can make it with a 9 inch pie pan or use a mini cupcake pan for appetizers. A salad makes a great side dish!

1-9inch single pie crust
12 slices or less of bacon (Optional)
1 cup shredded Swiss Swiss Cheese(We like to use Swiss Loraine Cheese
1/3 cup minced onion
1 cup of chopped vegetables(Optional)*Please remember when you add vegetables: the more watery the vegetables are the longer it will take to cook.
4 eggs, beaten
2 cups of light cream
3/4 teaspoon of salt
1/4 teaspoon of white sugar
1/8 teaspoon of cayenne pepper

Preheat oven to 425 degrees

Place pie crust on counter to thaw a little.
It makes it easier to unroll.

In a skillet:
Cook bacon until crispy.
Drain on a paper towel.
Chop coarsely.

Prepare onions,vegetables (if using any)and cheese.
Place shell into pie dish.
Sprinkle onions, vegetables, cheese, and bacon into pie crust.

In a medium bowl:
Whisk together eggs, cream, salt, sugar and cayenne pepper.
Pour into pie crust.

Bake for 15 mins in preheated oven.
Reduce heat to 300 degrees and cook for another 30 mins or until a insert a knife into center until it comes out clean.

Allow quiche to sit for 10 mins before cutting.

Cottage Cheese Pancakes (serves 2-4)

I love these pancakes! They are filling, better for you, and taste as great as pancakes do!

1 cup of cottage cheese (we use low-fat)
4 eggs
1/2 cup of flour
3 Tbs of melted butter (microwave 30-45sec)

In a bowl:
Beat the eggs.
Add cottage cheese, flour and melted butter.

Whip the mixture with an electric mixer.
You want to chop up those curds so that the batter is thin.

Heat pan or griddle.
Cook pancakes until golden

Keep pancakes warm between 2 plates or in a preheated oven of about 200.

Serve the pancakes by topping them with any of these:
syrup
cream cheese fruit dip
berries
bananas
...or peanut butter!
Mix it up for variety.

Vegi Pesto Pizza (serves 2-4)

Here is a delicious and simple pizza recipe.

Pizza Dough
1/3 cup Pesto
1-2 tomatoes, sliced
1/2 red onion, sliced
red or green pepper, sliced
4-5 mushrooms, sliced
1/2 16ozjar of artichoke hearts, sliced
1 hand full of fresh cilantro
1-2 cups of cheddar, mozzarella or blend cheese

Preheat oven to 375

Spread Pizza Dough onto a pizza pan or stone.
Spread Pesto onto dough.
Add vegetables (tomatoes, onions, peppers, mushrooms and artichokes)
Sprinkle cheese and cilantro on top of the pizza.

Bake in oven for 25-30mins.

Tuscan Chicken Milano (serves 6)

A quick and easy pasta dish! I recommend a salad as a side.

Time:
Prep: 5 mins
Cooking: 40 mins

1/2
cup chicken broth
1 head of garlic (around 10 cloves)
3 cups of pasta (we used penne)
2 boneless chicken breast (strips that are sliced thin and sliced diagonally)
10 mushrooms, sliced
2 Tbs. olive oil
2 Tbs. flour (we used wheat)
2 cups low-fat half 'n half
1/2 cup diced, oil drained sundried tomatoes
2 Tbs. grated Parmesan Cheese

Heat grill or broiler.

Heat a small sauce pan on high heat, bringing broth and garlic to BOIL.
Reduce heat to MED/LOW
Cover and SIMMER for 25 mins. or until garlic is soft.
Blend mixture in a food processor or blender until smooth.

COOK pasta and drain.

BROIL or GRILL chicken breast for 6 mins.

In a skillet, COOK mushrooms in olive oil for 3 mins.
Gradually add flour, half 'n half and garlic mixture.
Stir gradually until mixture thickens.
Stir in sun dried tomatoes, Parmesan, chicken and pasta.
COOK for 2 mins. or until heated through.

Season with salt or pepper.
